Recipe #1: Apricot Oatmeal

Ingredients:
1/2 tsp grated nutmeg
2 tbsp brown sugar
4 tbsp oat bran
10-15 finely sliced dried apricots
1 1/2 cups quick-cooking rolled oats
4 cups nonfat milk

Preparation:
Combine the oats & 3 cups milk in a medium saucepan.
Bring the mixture to a boil.
Mix in nutmeg & oat bran.
Reduce heat & let simmer, stirring for about 1 min.
Divide among 4 bowls.
Sprinkle top with apricots & brown sugar.
Serve with remaining milk on the side to mix in if desired.
